Cachaça vs. Rum – what is the difference?

Cachaça and rum – both are made from sugarcane, both are spirits with character. And yet, they are fundamentally different. We explain what lies behind these two classics and why cachaça plays such a special role in Brazil.

The Origin

Cachaça is a typically Brazilian spirit and is considered Brazil’s national drink. It is produced exclusively from freshly pressed sugarcane juice – immediately after harvesting, with no intermediate steps. This gives it a fresh, lively aroma with light grassy and fruity notes. Cachaça may only be produced in Brazil – similar to how Champagne must originate from the Champagne region.

Rum, on the other hand, is usually made from molasses – a byproduct of sugar production. The result is a sweeter, fuller-bodied spirit with caramel and vanilla aromas. Rum is produced worldwide, primarily in the Caribbean.

The Production Process

The crucial difference lies in the raw material. Cachaça is distilled from fresh sugarcane juice. This must be processed within a few hours of harvesting. This requires distilleries to be located directly on the sugarcane fields. Rum, conversely, uses molasses – a stable byproduct that can be transported and processed globally. This explains why rum is produced globally and cachaça remains an exclusively Brazilian product.

The Taste

Cachaça tastes fresher and lighter than rum. It sometimes has light earthy or grassy notes. Depending on its maturation in wooden barrels, it develops complex, woody aromas. Rum is generally sweeter and rounder in taste. It pairs well with cola, coconut milk, and fruit juices.

The Use

Cachaça is the base for the world-famous Caipirinha – Brazil's most well-known cocktail. Rum, on the other hand, is the foundation for mojitos, daiquiris, and many other classics. Drinking cachaça neat is also common in Brazil – particularly aged cachaça from wooden barrels is enjoyed like a whiskey or cognac.
