When was the last time you drank a cachaça that truly surprised you? Not the sugary supermarket Caipirinha base, but one that tells a story. One where you can feel that someone has known what they are doing for generations.
That is exactly what Santo Grau is. Four bottlings, four regions of Brazil, four completely different characters – connected by one philosophy: craft over industry, origin over uniformity.
What is Artesanal Cachaça?
Not every cachaça is the same. While industrial bottlings prioritize efficiency, artesanal cachaça stands for small batches, manual harvesting, natural fermentation, and distillation in copper pot stills. Santo Grau works exclusively with historic, family-run mills – operations that have been using the same methods for generations. Each bottle carries the DOCG seal as a guarantee of authentic production.
Coronel Xavier Chaves – Mineral, salty, uncompromising
From arguably the oldest continuously operating cachaça distillery in Brazil, on the Estrada Real near Tiradentes. In the ninth generation, brothers João and Francisco run an operation where cachaça is still made almost exactly as it was over 250 years ago: water-powered mill, wild fermentation using Criollo corn as a starter, and open-flame distillation. Only about 80 liters of cachaça are produced from around 1,200 kg of sugarcane.
On the palate: mineral, salty, dry – little fruit, lots of character. If you expect banana and tropical sweetness from a cachaça, you will be surprised here.

Paraty – Five generations of coastal tradition
Paraty is one of Brazil's most historically significant cachaça regions – and Santo Grau Paraty carries this history in every bottle. For five generations, this white cachaça from the Fluminense region in Rio de Janeiro has been produced using the same method. Crystal clear, intensely fruity on the nose, smooth and full-bodied on the palate.

Itirapuã – Silver Cachaça from São Paulo
In rural São Paulo, a traditional water wheel drives the mill – relying solely on gravity and hydropower. Santo Grau Itirapuã is a silver cachaça: crystal clear, with a gentle, fresh aroma and a smooth, full-bodied taste. An accessible entry into the world of artesanal cachaça.
Solera P.X. – When Brazil meets Jerez
The Santo Grau Solera P.X. belongs to the Rare Line – and is one of the most unusual bottlings in the collection. Aged in the traditional solera system in Pedro Ximénez barrels from the traditional Spanish house Osborne, it acquires a natural sweetness without any added sugar. Full-bodied, with notes of wine and grapes – a cachaça for special moments.

Conclusion: Four bottles, one philosophy
Santo Grau does not stand for mass production, but the opposite: small quantities, genuine origin, and traceable craftsmanship. Whether you are looking for a mineral-dry cachaça for a Caipirinha or a barrel-aged rarity for sipping neat – the Santo Grau line has the right answer for every taste.
