In Brazil, the Bolo de Café is as much a part of afternoon coffee as the café com leite itself. This moist coffee cake captivates with its intense coffee aroma, a light crumb, and a natural sweetness—all without the need for elaborate decoration. A true classic of Brazilian home cooking that turns out perfectly in any kitchen.
Ingredients (for a loaf pan, approx. 10 slices)
- 3 eggs
- 200 g sugar
- 100 ml neutral vegetable oil
- 150 ml strong Brazilian coffee, cooled (e.g., made from Café Pilão roasted & ground)
- 250 g all-purpose flour (Type 405)
- 1 packet baking powder (15 g)
- 1 pinch of salt
Preparation
- Preheat oven to 180 °C (356 °F) top/bottom heat. Grease a loaf pan and dust with flour.
- Beat the eggs and sugar with a hand mixer for about 3 minutes until creamy.
- Stir in the oil and the cooled coffee.
- Sift the flour, baking powder, and salt, and gently fold into the mixture until a smooth batter forms.
- Pour the batter into the prepared pan and bake for approx. 35–40 minutes. Perform a toothpick test.
- Let the cake cool in the pan for 10 minutes, then turn it out and let it cool completely.
Tips
- Coffee quality matters: The stronger and more aromatic the coffee, the more intense the result. Brazilian coffee with chocolatey notes works particularly well.
- Glaze: For a simple coffee glaze, mix 100 g powdered sugar with 2–3 tbsp of strong coffee and pour over the cooled cake.
- Storage: Covered at room temperature, the cake keeps well for 3–4 days and actually becomes even moister.
