Azeite de Dendê – Palm Oil for Bahian Cuisine
Cepera's Azeite de Dendê is the typical palm oil from northeastern Brazil. With its orange-red color and strong distinctive flavor, it defines Bahian cuisine – dishes such as moqueca, vatapá, bobó de camarão and acarajé are hardly imaginable without dendê.
The oil palm originally comes from West Africa. In Bahia, the oil is still closely associated with Afro-Brazilian cuisine today.
Uses
- Add to moqueca at the end – for color and aroma
- For vatapá, caruru and bobó de camarão
- For frying acarajé
- Use sparingly: Just one or two tablespoons flavor a dish
Our recipe for Moqueca Baiana shows you how to use dendê. You can find more ingredients in the Spices, Sauces and Oil collection.
