Farinha de Mandioca Crua – raw cassava flour by Yoki
Cassava is one of South America's oldest cultivated plants and was a staple food of the indigenous population long before the arrival of Europeans. Yoki's Farinha de Mandioca Crua is unroasted ("crua" = raw) cassava flour – ideal if you want to roast it yourself and season it to your taste.
Typically Brazilian: Farofa & more
The best-known preparation is farofa: fry onions, add eggs or bacon to taste, stir in the cassava flour and roast until golden brown, stirring constantly. Farofa is served in Brazil with feijoada, churrasco and many other dishes. Beiju, a simple flatbread made from moistened and baked cassava flour, comes from northern Brazil.
The flour is also available pre-roasted as Farinha de Mandioca Torrada and pre-seasoned as Farofa Pronta.
