The typical flavour of Brazilian cooking comes from a few characteristic ingredients: seasoning salts such as Sazón and Tempero Completo, garlic and salt (Alho e Sal), chillies such as malagueta and comari, hot pepper sauces, colorífico for the orange-red colour and Azeite de Dendê – the palm oil from Bahia.
Sazón is one of the best-known seasoning brands in Brazil. Its varieties are colour-coded by use – for example Vermelho for meat, Verde for poultry and fish, Marrom for beans and Amarelo for vegetables. To try them all, there is the Sazón seasoning set.
At a Brazilian barbecue the meat is traditionally seasoned with nothing but coarse salt. Chimichurri and a pepper sauce go well with it. More in our churrasco guide.
Dendê oil gives dishes from Bahia such as Moqueca Baiana their orange colour and typical flavour.
